Ø  3 bay leaf

Ø  2 table spoon fresh lime juice

Ø  1 table spoon salt

5 Step Method

Step 1: Take a large deep cooking pan and pour two spoons of cooking oil in the pan and allow for half a minute for oil to heat.

Step2: Add 5 cloves, 5 cardamom, 1 tea spoon whole black pepper, 1-2 piece cinnamon and 1 tea spoon whole jeera (cumin seeds) until the cracking sound from jeera is heard ( this would take about 2 minutes). Add 3 bay leaves and allow to fry for about 15 seconds. Add two tea-spoon ginger garlic pastes into it and sort/stir the entire mixture for about two minutes.

Step3: Add three chopped onions into the mixture and sort it for 3-4 minutes until it turns light brown. (You might want to add a tea-spoon of salt in to this mixture at this point to hasten the browning of the mixture. ) Now add three chopped tomatoes into the mixture and stir it for about 2 minutes to make a homogenous paste.

Step4: Add  1 ½ table spoon of turmeric powder,  1 table spoon jeera powder, 1 table spoon coriander powder, table spoon chilli  powder,  1 table spoon garam masala, 1 table spoon of yogurt, and 2 table spoon of fresh lime and stir it for 1-2 minutes to turn into a uniform paste.

Step5: Now add 1 kg of sorted chicken pieces into the mixture and mix it thoroughly for about 3-4 minutes. Add about  1 ½ glasses of water to this and salt to your taste. Cover the pan and allow the chicken to cook for 30-40 minutes.

Your delicious chicken curry is ready to eat. Transfer the cooked chicken in a large serving bowl and garnish it with chopped coriander pieces and whole green chillies. Serve hot with Indian rotis/naan/chapattis or white rice.
